Ham and White Bean Soup

Ingredients

  • 2 Tbsp. olive oil
  • 1 1/2 Tbsp. butter
  • 6 carrots, diced
  • 1 large onion
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 1 ham bone
  • 2 15-oz. cans great Northern beans, drained
  • 2 c. chopped ham
  • 1 1/4 tsp. black pepper
  • 1 tsp. dry mustard
  • 1/4 tsp. ground thyme
  • 1/4 tsp. nutmeg
  • 2 bay leaves
  • 4 c. chicken broth
  • 4 c. water

Instructions

  • In a large stockpot, heat butter and olive oil over medium heat. Add carrots, celery, onion, and ham bone and saute until vegetables have softened, about 6-8 minutes. Add garlic and saute another 30 seconds.
  • Add all remaining ingredients and bring to a boil. Lower heat and simmer at least 30 minutes.
  • Remove ham bone and bay leaves and serve.
